End-of-summer zucchini, tangy heirloom tomatoes, a smidgen of parm (or if you’re totally vegan, a schprinkle of nutritional yeast). Bake it all until tender and golden, then top with basil if you’re feeling really cheffy.

A whole darned whole-food dinner (or side dish) made with just three easy ingredients? Yep. You’re dag-gummed cheffy, you clever thing you.

3-Ingredient Zucchini Boats | Vegan, Paleo, Stupid Easy Delicious. Make for dinner or as a simple side. You will love.

Ingredients
  1. 4 zucchini
  2. 1 cup fresh diced tomatoes
  3. 1/4 cup grated parmesan (or 2 Tbsp. nutritional yeast)
  4. EVOO
  5. Salt & Pepper
Instructions
  1. Preheat oven to 400 degrees.
  2. Slice zucchini lengthwise. Place on a parchment-lined baking sheet.
  3. Scoop the inner seeds from each zucchini. Spoon fresh diced tomatoes into the center of each zucchini. Drizzle with olive oil. Salt and pepper. Sprinkle with grated parmesan or nutritional yeast.
  4. Bake for 15-20 minutes, or until the zucchini become soft and tender. Serve and enjoy. Garnish with basil, if desired.

    THANK YOU for not pretending a pre-made tomato sauce is a single ingredient, and instead opting for the fresh tomatoes. I’m seriously sick of seeing it on a lot of food blogs due to it really not being one ingredient, it often not being the healthiest option because of added sugars and whatnots, and because pre-made sauces aren’t as easy to come by in every country (thank god).

    Sorry for the rant, but yeah… it’s just really refreshing to see a simple, short and healthy recipe without any cheap shortcuts! Thank you :)
